Claire Lara is to become Executive Chef of the 50-seat La Mouette (The Seagull) restaurant at the new Royal Hilbre Boutique Hotel and Spa in Hoylake. Food will be Modern European and the restaurant will also offer afternoon tea. There will also be a 25-seat private dining room.

What with Hoylake's existing reputation as a great place to eat out, with Marco Pierre White and Claire Lara opening new restaurants here, and Aiden Byrne appearing at the Hoylake Food Fair, this is all great news for Hoylake and the region as a whole.

Any more chefs interested in coming to Hoylake? We know a lovely building on Market Street just crying out to be a good restaurant or café!

We wish the proprietors, management and staff of the new hotel and restaurant all the best as they embark on this exciting new venture.

What all of this tells us is that Hoylake has the capacity for a broad offer: from good-quality budget, all the way through to high-end accommodation and cuisine.
